Excellent and easy breakfast buttermilk and buckwheat pancakes
2 eggs, pinch salt, 2 cups milk,melted butter approx 2 tablespoons, half and half buckwheat and white flour, add equal parts of the flours and mix in until you have the desired consistency (like a thick liquid). Fry in butter. Serve with jam or bananas and maple syrup.
Can add a cup of buttermilk instead of milk for a lovely flavor, if you have it on hand. Otherwise just milk is fine.
